INGREDIENTS
Cucumber : 1/2 cut into small cubes
Cherry tomatoes : 4 or 5 in numbers cut into have
Avocado : 1/2 cut into small cubes
Quinoa : 1/3 to 1/2 cup.(cooked with a pinch of salt and drained)
Olive oil : 1-2 tablespoon
Salt : to taste
Pepper Powder : to taste
Lemon juice : 1-2 teaspoon
SEASONING
For seasoning you can use any salad seasoning or dried oregano,parsley leaves (even you can substitute the dried ones with the fresh ones)
METHOD
Take a mixing bowl into that add cooked and drained quinoa along with the chopped cucumber,cherry tomatoes(can use tomatoes as well) avocado and give it a mix. Mix some salad seasoning or dried / fresh oregano and parsley(1 teaspoon each) into 1 tablespoon of olive oil and a teaspoon of lemon juice and mix it well.Add this into prepared veggie quinoa bowl and give altogether a mix . Add some salt and pepper powder as well...
